Take your breakfast to new heights with a low carb pancake recipe that'll make you sloooow down your morning routine. And if you want to give a bit more spice, add an apple topping that's, well ... tops.
Ingredients
- Spiced Apple Pancakes
• 1 cup Southern Recipe Pork Rinds, crushed
• 1 cup Oat flour
• 2 Tbsp. Baking powder
• 2 tsp. Apple pie spice
• 2 cups Buttermilk
• 2 Eggs
• 2 tsp. Vanilla extract
• 2 Tbsp. Vegetable oil
• 1/2 cup Water
• Butter for frying
Apple Topping
• 4 Tbsp. Butter
• 6 Apples, diced
• 1 tsp. Apple pie spice
• 1 cup Brown Sugar
• 1/2 cup Water
• 1 Tbsp. Cornstarch
Preparation
1. Start with 1 cup of crushed pork rinds.
2. Add oat flour, baking powder, apple pie spice, and buttermilk and mix well.
3. Add eggs, vanilla extract, and water. Mix very well.
4. Fry until both sides are golden
Apple Topping
1. Melt butter in pan. Add diced apples, apple pie spice, brown sugar, water, and cornstarch.
2. Cook for 15 minutes or until apples are soft.
